Red Onions sometimes, and sometimes they don't leave a stain?

Does it have something to do with the ripeness?

  1. I get purple stains when I'm cutting beets and red cabbage.

    It is because of the natural coloring found in the veins of the vegetable. Orange juice is orange, Cherry juice is red, etc.
