Why do you get firm yolks in free range hen's eggs before you cook them.?

  2. Because they are fresher as a rule.

  3. Simple...they have gone through less processing and arrive at the store in a fresher condition. The reason eggs are watery is because they are old or have been left at room temperature too long. And when they are firm it means they are fresh and have been properly refrigerated!
