Why do you have to defrost some foods before cooking and others you can cook from frozen?

  1. It probably has to do with how it will turn out and its water content, if you cook something without letting it defrost it might turn out watery or soggy.

  4. I have cooked stuff from frozen state without a problem. You just have to cook it longer than the recipe says... but if your making a casserole then you have to defrost or at least pan cook and get the ice off of it before you make the recipe.

  5. I think it has to do with the internal tempature of things, all of the things i can think of that need to be defrosted is meat. Meat including poultry should be cooked so the internal temperature reaches a certain degree for a certain amount of time. This is to kill any bacteria that reside in the meat. So if you didnt defrost, the exterior of the meat would be cooked and the inside would still be left (possiably) not cooked well enough to have killed all the bacteria. Thus that little pop up thing on a chicken.

      Also i would think it could cause the exterior of the meat to be dry and would pull the juice (moisture) from the inside thusly leaving you a tough dry piece of meat.

  6. some things like vegetables and frozen pizza are pre-cooked and don't need to be thawed,meat can be cooked frozen if you are experienced and know what your doing, A lot of meat needs to be cut into sections before the cooking part begins and take longer than pre-cooked foods.
