For the same reason there are few foods that are very acidic.  Both are reactive and tend to be neutralized.  Yes, we use acidic foods such as vinegar and lemon juice, but usually iin small quantities to add piquancy to an otherwise bland food.  Most alkaline foods are mildly so (leafy vegetables).  We also use alkali (bases) in cooking to a limited extent, usually as catralysts (sodium bicarbonate)

  4. pH greater than 7 indicates a base; bases taste bitter.

    Your body has adapted to reject bitter tasting foods since most poisons are bitter.  Coffee, tea and quinine are some of the foods that are bitter.
