idk bout the s*x thing, but i notice guys jaw locks a lot anyways, and i do belive its b.c of there bone structure, its prolly biger and makes it easier to lock up ,, and if that is something tht hapens in s*x then its prolly the muscles that are tighten up and it could be b.c any number of things that are going on in the male body during s*x.
