Because you have to drink a far larger quantity of liquid in order to get the same intoxication level. If you are mixing your liquor into drinks, most of them will be very sugary, so your body will retain more water in order to process the sugar. You body needs a lot of water in order to metabolize sugars. Beer has little residual sugars so your body can process out the liquids more quickly.
