Because of the gas they put in cokes to make it fizz. It's like carbonation or something. I don't know, on a normal day I could tell you the exact name, but yeah anyway I think that's why it does it.

Or it could be something they put in for flavor, and the mentos causes pressure and yeah. Like baking soda and venegar.
