Why does honey not go bad?

ie: how does too high of a sugar content kill germs / prevent spoiling?

  1. yes, it is the sugar content.  no bacteria can live in those conditions.  It's the same with maple syrup.  You will however get some molds that grow on top of the honey or maple syrup.  These molds can be easily removed, and you can still use the honey, or maple syrup.

Actually, honey can go bad and become unusable.  Some poor methods of storing honey, such as putting it in the refrigerator or leaving it in a cupboard for a long period of time (well over a year) can leave honey dried out to the point where it is completely unusable.  Incorrectly replacing the top or lid on the container can also cause honey to dry out very quickly.  You might not be able to even get it out of its container.

  5. The enzymes in the honey keep it from going bad, but it will turn to sugar if it gets too cold or sits for a long period of time. If this happens just heat it up, it will return to it's original state.
