Why does itunes/ipod updates take up so much space?

Every time I upgrade itunes and ipod my memory decreases, do the upgrades add on to its original file size? Is there anyway to delete old itunes stuff to free up space? And finally is there a reason why syncing and backing up my ipod when there is no new data to add on to it, decreases space on my hard drive?
