well just like fire lightning changes colors depending on the temperature of the lighting bolt, if blue it means that it is very hot, if yellow it means colder but not cold so dont get shocked!

different heat different color. Same applies with stars to a certain extent. and how do you telll the diff between a star and a planet. The star sparkles and the planet won't.
