Why does mildew stink? Is it to repel predators?

Both nutrients and bacteria (also mould and mildew) collect in all the tiny spaces. There they thrive in warm, wet and relatively protected microenvironments. Bacteria decompose the organic matter and some produce noxious smelling gases as a result of their metabolic activity (usually anaerobic types).
