Why does my cake mix cakes keep sinking in ?

I keep making box cakes such as Duncan Hines and I follow the directions completely. When I take the cake out of the oven it has risen like it's suppose to. But while it's cooling it sinks down and becomes dense and flat. Does anyone know what I'm doing wrong? My son wants me to make him one for his b-day so please help. Thank you very much !

  1. Might want to make sure your oven's thermometer is calibrated correctly. And make sure the cooking is even.

  3. Before you take it out of the oven, test it in one of these ways:

    1. Stick a toothpick or skewer in the middle.  If there's wet stuff on it when you take it out, the cake isn't done.  There should be nothing, or only a crumb or two.

    2. Touch the top of the cake lightly.  It should bounce back, not retain your finger mark.

  4. Try letting your cake bake for longer. If this does not work, make an ice cream cake or a cake with something in the middle of it so it makes it impossible to sink in.

  5. You are not baking it long enough or your oven's thermostat is out of whack.  If you follow the directions exactly, it should turn out.

  6. You're probably overbeating the batter.  It's ok to have lots of small lumpsin it when pouring into pans.

  7. If a homemade cake fell (the center of the cake sinks), the following problems may have occurred:

    The cake was under-baked - the oven temperature was too low and/or the baking time was too short.

    The liquid was over or under measured.

    The pan was too small - the batter was too deep.

    The cake was moved or jarred before it was sufficiently baked.

    Old or expired baking powder was used.

    A wooden pick or cake tester was inserted into the cake before it was sufficiently set.
