Question:

Why does my chicken turn out soggy when its supposed to be crunchy?

When I bake chicken thats supposed to have a crunchy coating, it always turns out soggy. What can I do to make it more crunchy?

  1. Check on it before it is fully cooked in the oven and if you have something that sucks up liquid then use it to take all the liquid out of the tray and pour it down the sink. Keep cooking and check on it every 5 or 10 minutes and if there is liquid then suck it up with whatever you used before and then leave it to cook. Remember to flip the chicken from one side to the other at least once or twice.

  3. when i preheat my oven i put whatever pan i'm cooking the chicken in, i put that in the oven so it gets super hot.  then i CAREFULLY take it out and add oil and then the chicken so you can hear it sizzle.  or i fry it in a hot pan for a few minutes to get it crunchy and then flip it over and then put the pan and all in the hot oven for about 10-20 min.

  4. turn it to broil for 5-10 minutes before serving,,,, make sure you do not have a lot of liquid in the pan

  5. Are you covering it? Maybe you should not cover it.

First question would be are you trying to crisp the skin of the chicken or is the chicken breaded in some fashon?  If it's the skin you are trying to crisp, a light brushing with melted butter while cooking, every so often will help.  Your pan should be uncovered to allow steam to escape, it's also possible that you are cooking the chicken at too low a heat, you can use a hot oven 380F-425F but watch your cooking time because the chicken will quickly dry out at this temperature.  As an alternative method you could start the cooking at a lower heat (350F) and raise it to 425F for the last quarter of the cooking time to help  crisp the outside. use the broiler as a last resort, place chicken on highest rack in oven and watch it closely because it will burn in a hurry!  Hope it helps - Bon Appitite!.  

  7. I used to have that problem also... I was cooking the chicken at too low of a temperature. I would try cooking it at 400 degrees.
