Why does pizza cheese get brown spots?

Cheese pizza always seems better than pepperoni.

My only theory is that it is cheese that gets burnt.

  2. The heat causes the sugars in cheese to caramelize.

  3. Maybe the dough does not rise enough. It shouldn't be too heavy it rises. I let mine rise once, then I punch it down, and let it rise it again. Or maybe it is a problem with the yeast amount. When you roll out the dough, is it thick (i.e., could it be rolled out to make a larger pizza?) Also, do you pre-cook the dough? It will get soggy otherwise. I always do for 10 mins or so (poke holes in it first, to let the steam out!). Then add the sauce and cheese etc., and bake again.

    I'm not sure about the cheese. May be a cooking time/temp problem.
