Why does shop made mayonnaise have vinegar in it

Mayonnaise is just eggs and oil, possibly mustard powder if you want it, the vinegar ruins it

because vinegar is a preserving agent.  are you sure you haven't confused it with salad cream.this has vinegar in it

Mayo usually also contains lemon juice.  The vinegar is a cheap substitute for the lemon juice.

I guess I'm confused by your question... Besides the ingredients you mentioned, all mayonnaise has some type of acid in it.. whether it be lemon juice or vinegar.   However, I believe vinegar gives a consistent product.

yeah mayonnaise has vinegar in it it helps to cut through the oil its the same with any dish that has a lot of oil/fat in it its to stop it been so rich it also helps to thicken it /emulsify
