  1. Because smoked salmon is usually put in a (salt, brown sugar, and other spice) cure before it is smoked not to mention the smoke flavor.


  2. Smoked Salmon takes on the flavours produced by the smoking process.

    The type of wood used can alter the flavour also.

  3. It depends on the smoked salmon, but sometimes it's cold-smoked- which means there was no real cooking involved in the process. This website provides a lot of good info. on cold smoked salmon: http://www.tracklements.com/. I think that not all salmon is cold-smoked, but you'd have to ask someone else for more on that... :)

  4. Before you smoke salmon or any other fish or meat, you marinate it or "brine"it to add flavor and moisture.  The wood smoke also imparts flavor.
