Why does the alcohol content of my distillate start at 65% and when cooled drop to 55%?

  1. It probably doesn't change.

    Alcohol is measured either by specific gravity methods, change in property methods (usually boiling point) or density (hydrometer). If you're using a hydrometer, you have to take the measurement at 65F or 15C or it won't measure correctly.
