  1. The fresh water has nothing to do with it, directly. The Atlantic salmon (Salmo) goes back and forth on annual spawning runs. Even among the Pacific salmons (Onchyrhynchos), there are some that make the run and return to the sea (jack salmon). Most of the Pacific salmons make that arduous trip only once. What energy they have left is expended in mating. Not a bad way to go, I guess.

  3. When a salmon is returning to where it was born and starts it's swim up stream it's body undergoes a change allowing it to breath in the freshwater again.

    If you just take a salmon out of the ocean and drop it in fresh water it will die, because it's body hasn't undergone the change.

    Add:

    Oh, you wanted to know why it dies after it's gone back to the Fresh water.

    For one, they are swimming up stream against the current it's a lot of work.

    Then there are possible water falls to jump over.

    They have to avoid the predators trying to catch and eat them.

    They go up stream, driven by their overwhelming need to mate. By the time they make it to where they were born, many have already died along the journey. The males that have made it start fighting each other for the right to mate, some more die.

    After they have dug a nest for the eggs and mate, they are so tired from the journey, fighting, and mating that their body wear out/gives out and they die shortly after.

Most salmon stop eating when they return to freshwater and have no energy left for a return trip to the ocean after spawning. After they die, other animals eat them (but people don't) or they decompose, adding nutrients to the stream. Steelhead trout, however, continue to eat in freshwater and many survive and return to the ocean. These fish can grow another year and then return to spawn again.

    A. The Pacific salmon are of the genus Oncorhynchus and are represented by seven different salmon species. The chinook, chum, coho, pink, and sockeye are species of Pacific salmon that occur on both sides of the Pacific Ocean. The other two species of Pacific salmon, masu and amago, are only found near Asia. Although not salmon, steelhead and cutthroat trout are also categorized under the Oncorhynchus genus based on similar characteristics with Pacific salmon. The Atlantic salmon is actually only one species of the Salmo genus. When the salmon returns to freshwater it is to mate.  It does not have a clue it will die.  But as it turns out, mating is the last thing the salmon does before it dies.  That is the way the fish has evolved over many millions of years.  It is common in Nature for animals to die after mating.  The lower the animal form the greater the frequency of mortality post breeding.  It is really common in insects.
