Why doesn't peanut butter spoil

I keep a jar in the RV for months, not in the fridge, and it is still tasty

  1. because it has a ton of preservatives

    but i still love it


  2. it's full of preservatives, additives and adjuncts.

    it's not real food,  it has a shelf life.

Actually, I don't think peanut butter has preservatives.  It does contain things that (also) do not need refrigeration -- honey, salt, oil...  And, of course, peanut (even ground) do not need refrigeration.  I read somewhere that if "additives" (preservatives, etc.) are added, it can't be called "peanut butter".  Anyway, there are a lot of things that can be kept unrefrigerated in tight containers (like "meals" you can find on regular grocery shelves).  Peanut Butter has a good "basis" for storing well.
