Casinos will shuffle to thwart card counters.  Pit bosses are usually familiar with card counting.  They watch and count along with suspected card counters.  If a player is increasing his bet every time the count goes in hs favor, the casino may decide that the player is a card counter.  If he is winning, the pit boss is likely to instruct the dealer to shuffle after every 3rd or 5th hand.

    If you mean why don't they manually shuffle every time, it's because they will lose a lot more money with the wasted time than they would to card counters.  If you play single deck though, they do shuffle every time.

  7. Card counters make up such a small percentage of all of the players in a casino, that the amount of money lost to card counters is far less than the amount of money the casinos would lose from shuffling more often or increaseing certain game securities.

    For example, when the dealer is shuffling, nobody is playing blackjack at that table so the casino is losing money, it cost them more money to shuffle often enough to detur card counters than it does to accept the winnings they take from the casino.

    Many people do not like contiunuous shuffle machines weather they are card counters or not, and may go to play at a different casino where the hand dealt games are more standard, if people wont play the games it cost the casino money.

    Hiding the shuffle from the players will only detur shuffle tracking, and shuffle trackers are rare among card counters.
