Why don't they refrigerate eggs in the stores in mexico?

  1. Never knew these things about eggs . Now I know...........

    Yes electricity and probably its not that important as the others have said. But what IS important is COLD beer. Refridgeration is sacred here , especially at the little stores and yeah , electricity is not cheap here and seriously they need all the room in the fridge they can get. This is the exact reason they have warned me not to eat fish past 12 oclock in the afternoon.

Eggs crack and mix better from room temperature.  Also, refrigeration is supposedly no deterrent to bacteria growth, or potential food poisoning, typically the only difference is the various kinds of bacteria that may grow, and that eggs can keep for at least a week without being refrigerated. Some people actually say that non-refrigeration helps eggs last longer.

  3. Eggs can be left unrefrigerated for several days. This used to be common in the USA too. But our eggs now take longer to get to market because of transit time going from farm to warehouse to distribution center before getting to market. Mexicans alsio tend to buy grocerys more often as in Europe and do not keep perishables as long as we do.

  4. Mexico isn't the only country where they don't refrigerate eggs.  And I've found that they last longer than a week.  I don't believe that they  wash them and I've heard that there is a natural protection on an egg that will keep it fresh for longer than a week.

    When I lived in Australia they didn't refrigerate their eggs and they didn't have an electricity problem.

  5. It may boil (no pun intended) down to economics - no refrigeration = less $$ to spend on electricity
