Probably because you prefer the fireworks, pomp, and pageantry long associated with pro wrestling. UFC wisely tries to distance itself from pro wrestling and present itself as more of a legitimate sport. Now here's hoping Elite XC will do the same and drop the trashy dancers before it becomes embarrasing to call yourself a MMA fan.

Longer rounds. Knees to the head when down. Fighters being fighters and not super stars.

Probably because they re-run the good fights and edit out the crappy ones.  It's what I would do if I was a video editor.
