  1. Topography is the lay of the land.  It includes mountains, valleys, plains, streams, lakes, oceans, and every other feature of the earth's surface.  Think about all the ways that these features affect our lives, and that will tell you why topography is important.

Many books have been written about this subject.  It is hard to reply to your question because it is so general.  The link below will help you focus your thoughts:

Human geography is a branch of geography that focuses on the study of patterns and processes that shape human interaction with various environments. It encompasses human, political, cultural, social, and economic aspects. While the major focus of human geography is not the physical landscape of the Earth (see physical geography), it is hardly possible to discuss human geography without referring to the physical landscape on which human activities are being played out, and environmental geography is emerging as a link between the two.

  2. I am assuming you are referring to the creation of topographic maps, which allow us to see and study the shapes and landforms in an area on a two dimensional (flat) map.  Topography is the study of the shape of the land, and a topographic map helps hikers, builders, scientists and others to know how steep, flat or hilly an area is, as well as to see other natural land features (and some man made ones) through the use of contour lines and symbols.  This is pretty useful information when planning a construction project, choosing a hiking route or camping site, or when studying the terrain of an area you've never been to before.  Almost all of the topographic data represented on the maps is gathered by satellites or airplanes, and is very accurate.
