The shape of a fruit depends on how it grows, its internal structure and all, because as it grows. the primary function of fruit is to keep the seed (or seeds) in it.

watermellon has a hard solid outer layer, notice how it grows into a almost perfect sphere.

Less hard fruits can take their own shapes.

It depends on how the cell grows outward

generally, if something moves outwards from a origin point, it results in a perfect sphere. But of course, furits shape are influenced by other factors as well. Fruits with well defined layer of skin (orange) or hard ones such as watermellon tend to grow more into a perfect sphere.
