  1. I've eaten a bazillion pork chops, but never with sauerkraut.  Must be a local custom wherever you're from.

  8. The brine base of Sauerkraut cuts the grease from the pork.

    But it's a traditional German dish.

    Italians use vinegar peppers ( vinegar does the same)

    You can also just squeeze lemon on greasy meats( same).

    So there is a reason.

    Acid cuts grease.
