  1. The tomatoes are acidic and will eat the foil.

    An example, not of tomatoes, but rhubarb.....I made a rhubarb cake once in a 9 x 13 pan and stored it in the refrigerator.  It was forgotten about after a few days after everyone had their fill of it.  I don't even know how long it was in there, but when I found it and dumped the rest of it in the garbage, the pan had big holes in it everywhere a piece of rhubarb was in contact with it.  I learned the hard way.

    Tomatoes react the same way.


  2. WHEN would I ever put foil on tomatoes??? ...  I'd imagine the ascerbic acid would react with the metal though....

  3. It causes a chemical reaction. People often make that mistake of covering Lasagna with foil, big no no. Cover with plastic wrap instead or transfer it to a plastic container. Also, don't use aluminum pans to make tomato sauce either: same principle.

  4. The acidic nature of most tomatoes make it a health concern.  The aluminum foil can 'leach' into the tomato, which will change the taste noticeably, and VERY slowly build up trace amounts of aluminum ions in body fat.  It's also the same reason any acidic fruits are shipped in cardboard and paper layers, not just to prevent bruising.

  5. There will be a reaction between the foil and the acid in the tomatoes, unless they are acid free tomatoes.
