  1. soy sauce is black because it is fermented sauce.

    There is soybeans, roasted grain, water and salt.

    it is fermented with yeast, and fermented in urns under the sun.

    Soy sauce gets it color from the fermented soybeans and roasted grain


  2. I believe that during the fermentation process, the soy bean color shifts from tan to darker color when combined with salt.

  3. Some brands do contain coloring but the black  or dark brown color is because the soybeans are fermented along with salt. This produces richer flavors that are described as Umami in Japanese.
