Why is spinach green,papaya yellow and edible part of watermelon red?

i m not sure about watermelon and papaya, but spinach is green because of its high iron content and chlorophyl....just like fenugreek leaves(methi), radish leaves, coriander and curry leaves...they contain lot of chlorophyl....but spinach has even high quantity of iron in it, which is recommended for most women who are aneamic or pregnant or breastfeeding their babies....this is all i know, hope this helps

Spinach is green due to chlorophyll pigment present in the chloroplast of the leaf tissue.

Papayas are  yellow due to the presence of carotene and xanthophyll pigments present in the chromoplasts of the fruit pulp.

Watermelon is  red due to the anthocyanins pigment present in the chromoplasts in the tissue.

The coloration of the different tissues in plants is due to the plastids which are present in the cells. Leucoplasts are white in colour, chloroplasts are green in colour and chromoplasts are of various colours. These plastids can take any colour at different time. Therefore green fruits ( chloroplasts) turn colurful (chromoplasts)  at maturity.
