Yes, it's a salad Buffet like Sweet Tomatoes but not as good.

Occasionally, just occasionally mind you, a person with a disability who is unable to reach all of the ingredients in the back might need assistance.

And it is truly decent of the restaurant to have that assistance available.

I don't really think of it as a waitstaff, but more of a busser-type position.  They clean up the tables and every now and then might refill your drink.  I usually tip $1-2 since they clean up, but they definitely aren't waiting on you like at a typical restaurant.
