Why isn't marmalade called orange jam?

    A clear, jellylike preserve made from the pulp and rind of fruits, especially citrus fruits.

    Jam

    A preserve made from whole fruit boiled to a pulp with sugar

    Jelly

    A fruit product made by boiling sugar and the juice of fruit

  4. Strictly speaking, it's marmalade if it's got recognisable lumps of peel in it and jam if it hasn't.  However, marmalade has generally come to describe stuff made from oranges.
