Wrong Question....Its not the Mughlai food exactly, as Mughal rulers never ruled Lucknow Directly...In Lucknow its the Awadhi cuisine, thats considered more delicate and exotic than the mughlai cuisine...Its underlying principle being "Dam Pukht" which means "the art of slow cooking" . This is different from Mughlai which involves tandoori food which is cooked fast

    Awadhi food is all about sophistication, patience and extreme skill...and thats why its liked at lucknow as it blends with the city's culture.

    And dont listen to people who say its diminishing, its all rubbish, you cant throw a stone in Lucknow without hitting a kabab wallah or a Biryani - Korma wallah :-)

  3. Time has changed a lot and so is true with the Lucknow-wallas tastes and likings. Again health conscious people there don't take heavy Moughlai Food very often. The city of Lucknow as seen in seventies, eighties, nineties and now a days clearly shows localites showing change in their tastes and preferences. Pizzas and burgers are picking up, so are the shakes, cold and frozen foods. People there are venturing out for new food items and tastes. A few select outlets serving Moughlai Foods have learnt to blend the preparations matching with the demands of present times. Perhaps the Law of Diminishing Returns in respect of taste for Moughlai Food is catching up fast in Lucknow.
