Why my veggiess chinese dumpling goes sour?

I can assure you that its not becoz the ingrendients going bad, i believe its somewhat the process/ the wrong mixture but idk why.

What i put inside are:

shitakke, carrot, watercress, ginger, garlic, dried (and soaked) beancurd, chives and shallot, young bamboo ( not sure whats in english) , sesame oil, soy sauce. yap thats all.

Any idea why?

  1. You didn't tell us about the process of making the dumplings so it is hard to critique anything but your terrible spelling.

    Bad ingredients are likely the culprit. Sesame oil goes bad very fast. I have even bought new oil that was already bad. Also the bamboo and watercress can also go easily.  


  2. do they go sour after cooking after a few days?  Or do they taste sour when you eat the dumplings freshly cooked?

    Do you precook the mixture before filling the dumplings?

    If you use raw ingredients and mince it all together, I can see that mixture going sour.  There are naturally occuring bacteria on the fresh ingredients.  when you mince and mix, but don't cook, the bacteria get a chance to grow which sour (causes the dumpling filling

    to go bad).

    Also, young bamboo (also known as bamboo shoots) tends to have a unique flavor which can contribute to the sourness.
