Why the color difference?

Question

Often, if not always, when a kitchen has a center island, the wood used in the island is a lighter or darker wood than the wood used for the kitchen cabinets. Why is that? Why isn't the same type of wood used?

Sometimes the island is used as a "focal point" of the kitchen, and a different wood might give it more of a furniture appearance.  Makes it stand out, and not just blend in with the rest of the cabinets.
