  1. Peppers turn red when they have reached their maximum size.  If they are not red yet, then they are still growing.

  2. Unless you are in an area of high humidity or are spraying the plants instead of watering I wouldn't worry about "rotten spots". Cayenne will take a while to turn red, give it some more time. If the plants are still producing more flower and fruit you are doing something right! You should pick them as soon as they get a nice red to them so that the plant isn't overburdened. Try water stressing the plants, letting them dry out a bit between watering's, so that they ripen a bit faster and will be a bit hotter.

  3. They take a long time to go red..mine did.In fact most that try to go red on the plant will slow the plants production down and a majority of the red ones will get rotten spots on them first..not all but some..I simply picked mine green and strung them up to go red ...his is called a "ristra"...heres some pictures...

    Here they are green..

Here they are a couple weeks later..I dry mine to grind up for cayenne pepper all through the year..

  4. When the pepper bush is ready to quit producing, it will create an enzyme that will turn the peppers red, the red color indicates the pepper is mature and ready for picking.

You can pick and use them when they are green, and they will turn red after being picked, but they won't be as hot as they would have been left on the bush to turn red naturally
