Why would the fan shut off and the compressor still run on a carrier air conditioner.?

I have a carrier air conditioner. For some reason the fan will shut off but the compressor is still running. Then it flips the breaker. I have changed the motor and put on a new one but it keep happening the same way. Does anyone know of anything else that I can do? Are there any web sites that I could check out? Where can I find the wiring schematics? Thank for the help.

If you have a large commercial/industrial unit

This should never happen, the coil will ice up, and the compressor will trip out on head pressure. Worst case the coil will split (if safeties fail)

Check the overload on the indoor fan contactor (there should be a reset push button on it). if its tripping on overload you could have either a faulty overload, an incorrectly set overload or the fan might be on the way out. the overload should be set (roughly) to the rated current of the fan (usually printed on the motor somewhere A or Amps) plus 10%ish (there is a correct formula, but this is all a tech would do).

You have fan motor getting ready to go bad, or the grease has dried out in the bearing.  Spray some WD 40 around bearing on shaft, there is no place to oil, this may help.  Turn off all power be fore raising cover.  I would also flip breaker off.   If your are unsure how to do this call a professional.

This sounds like a short.  If it trips the breaker, first see if the circuit it is on is large enough in capacity.  Next look for other strain on the circuit or a break.

If you cannot find the wiring diagrams, contact Carrier (or a dealer) or look online.  You also might be able to get a book on eBay.

Do you have a voltmeter?  You need to be chasing down the fault on this thing.  It would be a good investment if you are as handy as you sound.  Maybe rent one for the day otherwise.  Or just break down and call an electrician.
