Will 240 volts cause a condenser fan to shut off on high temp? The fan is 208/230.?

240 should have no effect thats well within design specs of plus/minus 5%  however a frequency mis-match will indeed kick the condenser off line

Make sure your capacitor is OK.

Check side to side movement in the motor shaft for possible bearing wear.

I do not know where you are but a 208/230 volt is 4 wire, 3 phase  electric in the U.S. A 220/240 volt is 3 wire 1 phase. that you can split to get the 110/120 volt. I am glad you have not killed you self.  3 phase appliance will not work on a one phase system. Three phase electric is for commercial and industrial use only. Are you sure you have 208/ 230, and not 110/230. if you are not in the U.S, then I need to back out of this.
