Will a vacuum chamber prevent meat from rotting?

if you place perishable food inside a vacuum chamber like steak, ham, fish, will they stay fresh in there forever?

  1. No, because some of the bacteria is anaerobic (meaning it doesn't need air).

    There will be less of the bacteria in a cut of meat than a whole animal so the cut may last longer, but you will also suffer dehydration of the stored meat and that will make it taste bad.

    When an animal dies and sinks in water its own internal bacteria start to break it down and that process creates gas inflating and bloating the corpse causing it to rise to the surface.  This same kind of bacteria is all around us and even if you gave you meat a good cleaning it would still be INSIDE of the meat.

    Fruit and vegetables will fare even worse because the bacteria inside of them will cause them to swell and burst.  A whole carcass like a fish will suffer the same fate.

    Coffee is vacuum packed to keep it fresh because the beans are dehydrated and cooked; the bacteria has been cooked out of them and all the water is extracted to not give the remaining bacteria any water to live off of.


  2. Since no atmospheric elements will be able to interact with the meat, then any rotting won't take place, but all the water/liquids will vaporize and leave you with something like jerky (uncooked).  I don't know if rehydration is an option.
