  1. No, carbon removes toxins only.

Activated carbon only removes metals (calcium, potassium, iron, magnesium, copper, etc.), organic compounds (medications, complex carbon chains, etc.), and similar contaminants.  While nitrite and nitrate are toxins, they are not metals, organic, or other adsorbable compounds for carbon.  The best way to remove nitrite and nitrate is by doing water changes.

  3. no it can only remove the smell of fishes and the harmful toxins such as chloramine and other tap water toxins.
