  1. I've never had a problem because I've done the same thing. As long as they are not green. They cook well and at least they don't get mushy like very ripe peaches. You may want to adjust the sugar amount if the peaches aren't very sweet.

  2. i wouldn't. why would you used fruit that hasn't developed that rich ripe taste? if you must use them, ripen them on a window sill, or in a paper bag, or in a fruit ripener (2 plastic bowls that fit together to make a dome over the fruit). you can't make first class food from second class ingredients.

  3. you should par cook your peaches about 3 to 5 minutes in boiling water and add lots of sugar to them, especially if they are not sweet.. The par cooking will help them soften a bit. I cant see or feel the peaches so i can not be sure.

    Good Luck!

  4. Your pie wont turn out very good. But if you put your peaches in a brown paper bag and close it.Leave in bag on the counter for 1 day and your peaches will be ripe.

  5. Wait till the peaches get a little more ripe and it will be much better. OR blanche the peaches  briefly to get the skins off. Remove the pits.  Add sugar to the peaches and a little water and cook them till soft on top of the stove. Thicken em with just a tiny bit of corn starch. Let them cool.  For the crust you only need ice water, butter, and flour. Blind bake your pricked pie shell for 10 minutes to prevent rising and a soggy bottom pie. Pour in your cooled filling and cover with dough. Make an X in the top,dot pie with butter, and bake for 400 degrees 40 minutes.

Let cool. What time is supper?
