It should, yes, as zinc is more active than gold.  Zinc often contains impurities such as lead - these will dissolve if there is enough unspent aqua regia, but may reprecipitate when more zinc is added, contaminating your gold.  You might try plating the gold out instead with electricity - this will probably give a purer product.  Copper is generally more pure than zinc, and as it will also displace gold, it may be a better choice for chemical precipitation.
