CAN ANY ONE TELL ME HOW TO MAKE WINE

  1. That easy:

    Get grape juice one gallon

    Container to put it in, bigger than one gallon

    Two cups of sugar

    Two packs of yeast

    Cover it, not tight -  it will explode, really

    wait two weeks to a month.

    it is crude but good.

    For something fancier go to an online wine maker site and you can buy all the gear and ingredients.

    Professionally:

    1. Grape berries are harvested.

        -destemmed, crushed for juice

    2. Juice is inoculated with a cultured yeast strain.

        -red wines have the juice recirculated over the must (crush grapes in their own juice) or the cellar-men do a "punchdown" of the skins down into the juice. This is to extract color and tannins.

    3. Wine acids are adjusted.

    4. Wine is further aged.

      -either in SS fermentors or in oak barrels.

    5. Final adjustments and filtration.

  4. Pick up any book by CJJ Berry. He takes you thru all the steps and has some interesting recipes for both grape and country wines. I'm particularly fond of his potato wine and his lemon wine. The carrot wine isn't bad either.

    Just remember: sanitation is all-important and you want to use real wine yeast, not wild ones.
