  1. Connect all of the bare(ground) wires together, connect all of the whites together, at the fan, connect the black to the black and the red and the blue.  At the switch, connect the single black to  each switch, connect the black from the 3 wire cable to one switch, connect the red to the other switch.  That should do it unless I didn't understand what you are asking.  If this doesn't work, call a qualified professional electrician.

  2. The first switch you are describing is either designed to switch both the light and the fan (eliminating the need for the second switch) or it is a switch for a 3 speed fan.  My guess would be that it is a three speed fan switch, but check the box it came in to be certain.

The fan you are describing is not a 3 speed fan.  Not enough wires.  If your switch is a 3 speed switch, you could use it, but the fan will only operate at one speed.  There is not enough information here to tell you how to wire it, the colors are not standardized.  Check the box or papers in the box for more details.  Another, perhaps better option, would be to exchange the switch for another.  A standard light switch will work fine for a single speed fan.

If the switch is designed to control the both the fan and the light, you would not need the second switch.  Again not enough information to tell you how as colors are not standard, so you will need to check the box or paper inserted in the box.  If you still need some help, you might include the manufacturer and model number of the switches.
