Not lookin for anything extravagant. Not looking to mooch either. Its just that its so hard to find an interesting independant woman.

Plus, I believe in the equality of the sexes, so I think its appropriate for her to buy every once in a while too.

Nope. I believe in equality of the sexes, too. But I think you're wrong on a couple of counts. First of all, women make less money then men do for the same job. Men should pay for women more than women pay for men because of this. Secondly, you made the invitation, so you should pay. That's just etiquette, whether you're male or female.  Good luck with your search though! :)
