Mainly it is the way you caress them in your hand, or mouth, whichever is closer.  When I was in New Orleans for Mardi Gras we researched this same thing.  They came up with a T-shirt that showed 10 of the most common types. Genetics was the key.  The young ripe ones to me were the most appealing.  But don't get me started.  I have a picture collection, and I painted a lot of them...  From of age to 82, they were having fun.
