Would it help it I replaced wheat foods with A LOT of fruits and veggies?

So as most of you know I'm a vegetarian (or at least trying). Would it be safe to replace food such as bread with a lot of fruits and veggies. People are telling me the negatives about wheat foods and I want to replace those with a lot of fruits and veggies (i prefer those anyways) Would that be okay?

    the lesser processed garbage you eat the much better off you'll be.

    that's the diet i've been on for 30 years.. fresh fruits and veggies!
