Would there be a drastic taste change?

If I added 1cup of raw honey instead of 1cup cane sugar in my spelt muffins and kept all other ingredients the same.

  2. Try buckwheat honey.

  3. I can guarantee your muffins won't turn out.  Too much liquid, too much of a different taste and the sugar content is a lot different.  

    The only thing you should really substitute for honey is something called golden syrup.   Not sugar.  Unless you're making a cup of tea.

  4. Honey is sweeter than sugar, and it contains some liquid. You can substitute honey for sugar, but use 7/8 of a cup of honey and reduce the liquid in your recipe by 3 tablespoons.  

  5. Contrary to popular belief you can use honey in the same proportions that you would normally use sugar. It is just another sweetener. Your final recipe will end up slightly more moist and in my opinion more delicious.

    Just go ahead and do it!
