There are many sports that have been rejected by the IOC. UF is the latest that has been viewed as "below them". Here is a list of sports rejected for the Olympics that I think would do well.

Bodybuilding

Jousting (that would rock!)

Skydiving

Water skiing

Hai Jai

Chess

Boomerang

Ballroom Dancing

Jump Rope

Also, any motor sports are immediately rejected since it is not "pure" sport.

They have pretty much all the martial arts and boxing in there already. All out fights used to be in the olympics... the real olympics.. it was called a Pankration and it was super-hardcore. Look it up, its incredible.
