That custom came from the Bubonic Plague times in Europe; one of which killed 1/3 of the population in the 14th century. One of the early symptoms was continuous coughing and sneezing, hence, God bless you!

Because, in many old cultures, especially European and Latin ones, people thought that your soul left your body and blessing you would bring it back.

it folklore....i'm not sure when or who, but along time ago certain people believed that whe you sneezed evil spirits could enter you body, so saying bless you was supposed to protect you.

People used to think when you sneezed spirits were coming out of you. So they would say bless you to keep them away for good...or something like that.
