I'm just wondering what would happen if I unpluged my spark plug while the engine is running.

only because I can't find the key and I always have to plug the ignition back in

If the voltage going to the spark plug arcs across and uses you for a ground, then it'll hurt.  Buy a toggle switch from a hardware store, cut the wires going to the key switch, tie in the toggle switch and zip tie it to the frame when you're done.
