Yamaha zuma?

can the yamaha zuma and/ or the zuma 125 scooter go interstate speed? 70 80?

No. They don't. If you are planning to ride  the Interstate. You're taken your life into your hands.

A few years ago, a guy riding a old Vespa P125 got creamed by a truck on the Interstate in my region.

no... top speed on the zuma 125 will be more like 60 maybe 65 with a good wind at your back.  But this will be pretty stressful on the bike since it is its very limit.  A 250cc or bigger would be a much more suitable scooter for you.
